Salmon and Brussels with Avocado Cream
Looking for something different to cook for dinner tonight? Our baked salmon and Brussels sprouts with avocado cream sauce may hit the spot. It's freaking delicious.
4 salmon filets, fresh or thawed
2C Brussel sprouts, cut in half
salt and pepper to taste
1 cup of water
3T whipped cream cheese
1t garlic powder
1t crushed red pepper flakes
Preheat oven to 350.
Spray a glass pan with non-stick cooking spray or lightly coat with extra virgin olive oil.
Place salmon filets in pan, skin side down, and sprinkle salt with salt and pepper.
Toss Brussels on top of filets.
Bake for 20 minutes.
While salmon and Brussels are in the oven, add all sauce ingredients to a blender and blend until smooth and creamy.
Once the 20 minutes is up, pour sauce on top of salmon and Brussels and cook for 10 additional minutes.
Garnish with extra red pepper flakes.
