3 Easy, Healthy (and Yummy!) Chicken Slow Cooker Recipes



When I graduated from college and moved to the city to become a working professional, my nana bestowed me with what would become my favorite post-graduate gift: a slow cooker. I didn’t get the hype at first, but over the years it has brought me the most delicious, hassle-free meals — from beef stew and soups to Thanksgiving turkey. Now, I am utterly obsessed!


During the pandemic, my slow cooker has given me peace of mind on so many busy days when I don't have the time to make lunch and during depressive slumps when I can’t muster the energy to follow an intricate, new recipe for dinner. With only four options (two on low heat and two on high heat), it’s so nice to just plop in ingredients at the beginning of the day and wrap up work to a dinner that’s already made for you.


If you’re like me and find yourself lacking time and occasional energy, here are three easy and healthy meals based on just two simple ingredients dropped into the slow cooker: chicken breasts and a jar of salsa. Any brand (or homemade salsa) will do!


Hearty Chicken and Vegetable Bowls

For lunch, I love whipping up shredded chicken and vegetable bowls. I let the chicken and salsa simmer in the slow cooker for four hours on high, then by lunchtime, I have the base for my bowl! When it’s done cooking, I heat up brown rice or jasmine rice, shred the chicken on top, and finish off the bowl with a bag of steamed veggies or of freshly-baked veggies for a hearty meal. If you want to turn it into a Mexican-style bowl, you can add in black beans, shredded cheese, lettuce and sour cream!


Ingredients

  • 1 or 2 lbs. chicken breast

  • 1 jar of salsa

  • Your choice of rice or quinoa

  • Frozen or fresh vegetables for steaming or baking (Carrots, bell peppers, tomatoes, corn, etc.)


Classic Chicken Caesar Salad

If you’re looking for a lighter yet filling meal, this is one of my favorites. I cook the chicken the same way I do for my chicken and vegetable bowls, then shred it on a plate and mix it into a pre-bought salad kit for extra ease. I typically put the salad and the shredded chicken into a food storage container with a top to mix it all up, and voilà! You have a juicy tossed salad.


Ingredients

  • 1 or 2 lbs. chicken breast

  • 1 jar of salsa

  • Pre-made salad kit or fresh ingredients for your choice of salad


Healthy Chicken Wraps

Whether you’re trying out the Tik Tok challenge or winging it on your own, it’s so easy to make a delicious wrap with shredded slow cooker chicken. When the chicken is done cooking, you can shred it up and put it into a wrap of your choice with any ingredients you like. Some days I’ll do ranch, buffalo sauce, and lettuce, and on healthier days I’ll just do lettuce, tomato, and maybe a sprinkle of cheese. What I love about this one is the variation possibilities: you can play with spicy, mild, smoky, sweet, and more. If you’re changing up the flavor drastically, don’t forget to separate the chicken from the salsa you cooked it in, or leave it out altogether!

  • Large sandwich wraps (Spinach, wheat, etc.)

  • Your choice of ingredients (Lettuce, spinach, kale, tomato, cucumber, etc.)

  • Your choice of sauce (buffalo, ranch, BBQ, honey mustard, etc.)
